Kiwi Chef Readies For SQ Debut

Acclaimed Kiwi chef Sid Sahrawat is set to become the first New Zealand-based chef to join the carrier’s guest chef.

Sahrawat (known for his restau­rants including Sidart, Cassia and Anise—as well as taking over the French Café) will create four sea­sonal menus for SQ’s first and busi­ness class passengers departing ex AKL and CHC from Mar. The dishes draw inspiration from his Indian roots and focus on local produce, Sahrawat said yesterday.

His first onboard menus feature a selection of signature dishes incor­porating Marlborough smoked king salmon (pictured) and kiwi fruit from the Bay of Plenty.

The seasonal dishes will include an appetiser of poached crayfish with corn and spring onion hash, maca­damia nuts and wasabi mayo. Mains include Canterbury lamb rack with roasted kūmara and korma sauce, while there’s a twist on the classic pavlova with salt-baked pineapple on the dessert menu.

Local SQ gm George Robertson says the collaboration with Sahrawat ‘will help deliver an exceptional in-flight dining experience, underpinned by the very best of New Zealand produce’. Sahrawat’s collection of exclusive dishes includes appetisers, soups, main courses, and desserts, in addition to SQ’s wider menu items and Book the Cook service
